Crispy Peanut Teriyaki Tofu- Vegan! 🥡🍛

Hi all, I've been trying to slowly wean myself away from relying on meat substitutes so have been experimenting with other alternatives this week.

I've never really cooked with tofu before, and find that most of the time when I order a tofu dish in a restaurant it is often quite lacking in flavour and the tofu is usually quite soggy.

I've been craving Teriyaki sauce, so thought I'd try to make my own and incorporate tofu, marinating it to lock in some rich flavour while keeping a nice firm texture which is a bit crispy.

Well, I think I did it!

Ingredients to serve 2:

For the tofu:

  • 1 block of firm tofu, sliced into 2 blocks
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp corn flour

For the sauce:

  • 4 tbsp soy sauce
  • 2 tbsp sriracha
  • 3 cloves of garlic, crushed
  • 1 tbsp brown sugar
    2 tbsp smooth peanut butter
  • 2 tbsp sesame oil
  • 1 tbsp sesame seeds

Other ingredients:

  • 1 white onion, diced
  • 2 spring onions, chopped
  • salt and ground black pepper

Method:

  • Start by preparing the onions, then leave to one side.

  • Add all of the sauce ingredients to a bowl and mix well, insuring the peanut butter is fully blended in.
    Taste and add a little more sriracha if you want it to be hotter, or more sugar for a sweeter sauce.

  • Lay your tofu out flat on a large plate or shopping board.

  • Layer with paper towels and press down firmly. Continue this process until all excess water has been removed.

-Dice the tofu into small cubes.

  • Add to a bowl with the soy sauce, sesame oil and corn flour.

  • Gently mix well until the tofu pieces are evenly covered.

  • Add some coconut oil to a pan on a medium heat, when hot add the tofu pieces and fry for 5 minutes, then flip each piece.

Don't worry if the colour looks dark, it is the sauce, the tofu isn't burnt!

  • Add the onions, salt and pepper and cook for another 2 minutes.

  • Finally, add the sauce to the pan and simmer for 2 minutes.

  • Serve with rice and garnish with some sesame seeds and chopped raw spring onions.

That's all there is to it! I'm not kidding when I say this was the most flavourful and delicious tofu I've ever eaten, really firm, crispy and so so tasty.

The sauce is spicy, sweet, peanutty and divine!

It's totally changed the way I think about cooking with tofu and I can't wait to try using other marinades with it for other dishes.

Yeah, I now view Tofu as more of a substitute processed product, so toss in into the substitute meats category. I hadn't eaten tofu or subs meats/cheese for a long time, but due to some life changes and less organic whole foods (not the store!!) stores, I tried Tofurkey Italian Sausages which I've found to be pretty useful for various meals, and tofu dogs, and some expensive Greek mozzarella cheese slices. At some time I'll remove them again and revert back to veggie textures.

I don't see anything wrong with meat substitutes eaten in moderation, especially as a way for new vegetarians/ vegans to wean themselves off of meat products- it can be encouraging at first to know that you can still eat things you enjoy without hurting animals! 😊

Certainly, they can be useful ladder to escape the mainstream foods culture.
