Today we have a Hokkoaido pumpkin.
This is made into a delicious soup.
To do this, peel and dice the pumpkin, carrots, ginger and onion, sauté in butter.
Pour in the broth and cook until soft in about 15-20 minutes. Then puree very finely, possibly pass through a sieve.
Stir in the coconut milk, season with salt, pepper, soy sauce and lemon juice and heat up again.
Serve garnished with coriander leaves.
