Recipes of Spain: Torrijas

Torrijas, a Spanish delicacy whose recipe has been passed down from generation to generation. Today, torrijas are the superstar of Easter. If you follow this recipe, their preparation will take you around 20 minutes and you will get 5-7 torrijas, depending on the size of the bread.

Ingredients:

• 1 baguette of bread
• 3 eggs
• 600 milliliters of milk (whole, semi-skimmed or skimmed, it's up to you)
• Cinnamon stick
• Cinnamon powder
• 100 grams of sugar
• Olive oil

Preparation

In a saucepan, boil the milk with 2 sticks of cinnamon and sugar. While the milk is heating, cut the whole baguette in 2 cm thick loaves. Remember, the fresher the bread is, the less time it will have to remain dipped in milk afterwards.

Once the milk with the sticks of cinnamon and sugar has come to a boil, pour it into a bowl and then soak the loaves of bread in it. In another bowl, beat the 3 eggs.

Heat the frying pan with the oil (strong heat) to get the torrijas cooked quickly, so that they don't end up being covered in it. With the hot oil in the pan and the egg mixture prepared in another bowl, wet the loaves of bread in the bowl that has the milk in it. Don't put in all the torrijas at once! Remember, depending on the hardness of the bread the torrijas will need more or less time dipped in the milk.

Once they're soft (but not to the point of breaking up), take them one by one and dip them into the egg mixture. Then, fry them in the oil. As soon as they are golden, turn them and wait for a nice golden brown on the other side. Once roasted, put the torrijas in a bowl and sprinkle them with powdered cinnamon.
