Recipes of Spain: Catalan Cream

A good dessert is always welcome! Especially if it's as spectacular as this traditional Spanish crème brûlée: smooth, creamy and delicious. You will love it!

Ingredients:

• 500 ml of milk
• 4 egg yolks
• 120 gr of brown sugar
• 1 tablespoon of cornstarch
• 1 lemon zest
• 1 cinnamon stick

Preparation

To prepare the authentic crema catalana, let's start by heating in a saucepan almost all the milk together with the lemon zest and the cinnamon stick. At the time it starts to boil, take it away from the heat.

Dissolve the cornstarch in the remaining milk.

Now, mix the yolks of the eggs with the sugar, stirring until everything is well mixed. Then, beat both mixtures with energy and place everything back on the heat.

Put the cinnamon stick aside and serve the crema catalana in small earthenware pots.

To decorate, sprinkle some sugar on top and burn it with the aid of a small kitchen blowtorch.

Put the pots in the fridge and serve chilled.
