How to make baked eggplant with meat and cheese
This is not only a hearty, but also a healthy dish. The vegetables with minced meat, tomato paste and parmesan cooked in the oven are rich in protein.

Ingredients
- Eggplant 2 pieces
- Tomato sauce 1 liter
- Ground meat 500 g
- Ricotta 200 g
- Parmesan 50 g
- Greenery taste
- Basil 3 branches
- Salt taste
- Ground black pepper taste
Cooking
- Wash the eggplants, dry them with a paper towel and cut lengthwise into equal halves. Carefully remove the flesh, making the fruits of the "boat." Do not throw away the pulp, it will come in handy.
2 ․ Put half of the tomato sauce on the bottom of the deep pan. Lay the eggplant halves on top.
3 ․ Prepare the filling. Place the minced meat in a deep frying pan and simmer over low heat until cooked.
- Cut the eggplant pulp into small cubes and add to the meat. Cook 3-5 minutes. Then add the remaining tomato sauce and ricotta, salt and pepper.
- Stir thoroughly and simmer another 5 minutes. Remove the filling from the heat and let cool slightly.
6 ․ Then fill each “boat” with the resulting filling. Sprinkle generously with grated Parmesan and finely chopped herbs and basil.
7 ․ Place the pan in the oven preheated to 280 ° C. Bake eggplant for 20–25 minutes, periodically checking readiness. Serve the prepared eggplant with tomato sauce and fresh herbs.
