Homemade Steak Fajitas

Hey Steemies!

I'm not a chef so I can't make my plates look supper yummy like they do but trust me, it is super tasty and better then the store bought package sauce mix! this is super easy to make for any level of home cook. I wont put the exact amount of spices, it's up to you to accommodate to your likes, some may like it lightly spiced, others may want it to punch you in the mouth when you take a bite. I generally just make enough for 3 servings because it just works out that way, with one steak, if you want more than you may double the recipe. Keep in mind if you double the recipe, it would be best to cook the steak in 2 batches to avoid crowding it and having it boil in the pan while cooking. For this you will need:

SPICES

Onion powder
Celery salt
Smoked paprika (It has to be smoked for best results)
chili powder
ground cumin
salt
Corn starch
THE DISH

Tortilla wraps (I use the large ones)
Fresh salsa or pico de gallo
Sour Cream
tex-mex cheese blend or double cheddar
Avocado (sliced)
Green onion (optional)
A good sized steak
Half of an onion (sliced into strips)
2 Garlic cloves (finely chopped or pressed)
Half of a red pepper and half of a yellow or orange pepper (cut into strips)
One branch of celery (cut into little sticks)
1 Lime (squeezed)
Butter and olive oil for cooking
Cilantro (optional)
INSTRUCTIONS

Cut all vegetables and set aside. I cut them first to use the same cutting board and knife without cross contaminating with the meat. Cut your steak into strips and mix in all the spices mentioned above except the corn starch (onion powder, cumin, celery salt, salt, smoked paprika, chili powder). Mix in the spices well and allow to sit for about half an hour.

You will need a large and a medium frying pan for best results. Using medium high heat (around 6.5 to 7 on electric stove), heat up the medium sized pan with a mix of butter and olive oil (they stabilize each other and will not burn during cooking). While your pan is heating up, mix 2 teaspoon of corn starch into the meat, it will help it retain it's moisture during cooking and help getting a nice sear on the meat. Add to the hot pan and cook for about a minute or two until one side of the meat is browned , turn the strips over and allow and other minute or two to brown on the other side. Remove from heat once it is cooked, do not overcook or you will dry out the meat.

At the same time as the meat, heat up the large pan with a mix of butter and olive oil for the vegetables (still at medium-high). Once hot, add the celery, onion and sliced peppers. Cook for about 1 minute or 2 until vegetables start to brown, stir and add in the pressed or chopped garlic. Allow to cook for another minute or until they are browned on both sides. Remove from heat, add in the cooked meat and add spices (salt , celery salt, cumin, chili powder, onion powder) and mix, add the lime juice and pulp and mix until it is well coated.

Prepare tortilla shells with salsa and cheese, add the meat and vegetables mixture. Top with green onions, cilantro, sour cream and avocado. Fold the bottom of the tortilla shell and tightly roll the 2 sides over the bottom and voila!! It's chow time!

A little tip, If you have a cast Iron pan, it makes killer vegetables, I always cook mine in cast iron, it leaves that nice char but crispy vegetables you would expect but be careful, they stay hot longer and can burn stuff faster then regular non-stick pan.

These fajitas were amazing! I found that the times given to cook onions and peppers for my family's preference were a bit low.

Good , I'm glad you liked them! I prefer my veggies with a crispy middle so my cook times may be fast for pickier eaters. Thanks for the feedback :)

Excellent dish. Fairly easy to make although does take some time to get the peppers and onions properly carmelized

I'm glad you enjoyed it with ease. Did you use a cast iron pan for the veggies? It does caramelize them much faster and better than a non-stick pan would.

Also Not stiring the veggies too often will caramelize faster.

That looks tasty! I've been eating out of cans and boxes, thanks to an incredibly busy schedule, so they look extra tasty.

OMG you poor soul!! I like to cook but yeah, sometimes working 80 hrs a week takes time away. Slow cookers and meal prep are great for that. I'lll post my taco recipe for you soon. Some of m recipes are just as time consuming as heating up a can of soup.
