Home Made Pumpkin-Orange-Ginger Jam | Recipe

In my family summer was a perfect time for making jams for winter. A lot of ripe cheap and fresh berries and fruits allow to easily combine everything together and make a lot of small jars of happiness, which family opens at winter and puts on the top of Russian Cottage Cheese Pancakes (recipe is here https://steemit.com/food/@kuklamasha/russian-cottage-cheese-pancakes) or crepes.

Today I wanna share probably a super summer recipe of jam (better time to make it - in August at the pumpkin season). You would be surprised at how rich the taste is. Once you open the jar, it reminds you of sunny days...

Prep time: 5 minutes
Cooking time: 30-40 minutes
Equipment: Large saucepan, knife, chopping board, sterilised jars

INGREDIENTS:

1kg pumpkin – peeled and grated
2 oranges – washed and finely sliced
1-2 tbsp. fresh ginger – grated
750g sugar
300ml water or orange juice
1 tsp. cinnamon
pine nuts - half of the glass

COOKING PROCESS

  1. Place the pumpkin pieces in a steamer basket in a pot. Add water to the pot so it reaches to the bottom of the steamer basket and steam the pumpkin pieces until completely cooked through; a paring knife will pierce the flesh easily and it will take about 30 minutes. During the steaming, add more water to the pot if necessary.

  1. Make a puree

  2. Put all the ingredients on the top of puree (except the pine nuts) in a large heavy bottomed pan and gently heat until the sugar has melted then bring to the boil.

  1. Cook over medium heat, stirring frequently, until the sugar dissolves.Continue cooking the pumpkin mixture, stirring constantly to prevent the puree from burning. When the marmalade begins to set, remove from heat and allow to cool for a few minutes.

  1. Sterilise jars and set aside (wash in hot soapy water, rinse then pop in the oven for 10 minutes at 180 degrees).

  1. Roast the pine nuts

  1. Pour the jam into the sterilized jars.

  1. Put nuts in the top of the jam how it's shown below:

  1. Put the lids on to create a seal.

  1. Store in the fridge! Enjoy the whole family!

Buenisímo. En navidad me gusta hacer mermelada de lechoza con piña. Los coloco igual en un frasquito y les coloco mis deseos con marcador con una linda etiqueta. Es increíble lo que puedes hacer con amor. Justo ahora tu receta me cae como anillo al dedo pues mi mamá tiene un poco apretado el pecho y le enviaron a comer jenjibre y esta es una excelente opción.
