Cook with Kris #2 - Bandit’s Style Chicken Wing 土匪雞翼

After sharing a Japanese style pancake recipe the day before yesterday, I decided to make a savory dish today. One of the most popular food among Hong Kongers is rice noodle.

"Tanjai SamGor Mixian" (譚仔三哥米線) is one of the chain Yunnan restaurant that is well known for its Bandit’s Style Chicken Wing and rice noodles. There’s always a friend among the group will suggest, "Let’s go to Tanjai", when we can’t decide which restaurant to pick.

Like others, I am in love with rice noodles and also the Bandit’s Style Chicken Wing. While baking this chicken wing, the smell of this chicken wing cumin permeates the entire kitchen, which stimulates our appetite.

You may wonder why people call it as Bandit’s style chicken wing. Originating from the history, it’s created by some Hunan bandits, who robbed from the village locals and took food, money even the spices.

They use the stolen spices to marinate chicken and smell of spices will spread and fill the entire area. The taste of the Bandit style chicken wing is unforgettable and become popular in Yunnan.

Today, I've decided to make Bandit’s style chicken wing at home. Below it’s the process of making it, let’s begin! ☺


Ingredients:


Chicken Wing16pcs
Cumin Powder4-5 tbsp
Black Sesame1 tbsp

Seasoning:


Cumin Powder2 tsp
Five-spice Powder1/2 tsp
Sugar1tsp
Soy Sauce1 tsp
Oyster Sauce1 tsp
Dark Soy Sauce1 tsp
White Pepper1 tsp
Shaoxing Cooking Wine2 tsp
Garlic2 tsp
Chilli1 pcs

Steps:

Step 1)

Stir fry the black sesame with bare pan
without putting any oil or water.

Step 2)

Wash and drain chicken.
Add all seasoning marinated for at least 4 hours up to 1 night.
It tastes better if marinated for overnight.

Step 3)

Preheat oven to 220 degrees.
Dusted the chicken wing with cumin powder and shake off the excess.

Step 4)

Put the fried black sesame on the chicken wings.

Step 5)

Place the chicken wing on the grid, bake for about 10 minutes.
Then flip the chicken wings to another side.
And continue to bake for about 10 minutes.

前兩天介紹了一個日式的pancake鬆餅的食譜,今天決定試試看做一個鹹的菜式。香港人喜歡吃米綫,譚仔三哥米線相信香港人不陌生,當想不到食什麼,身邊總有個朋友會提議 “不如食譚仔。”
當中小食土匪雞翼更是大家的摯愛。我也不例外,土匪雞翼是我很喜歡的家常菜,烤的時候那孜然香味,蔓延整個廚房,令人食胃大開。

土匪雞翼這個名字很有趣,那為什麼叫土匪雞翼呢?相傳是昔日湖南土匪的傑作,他們不但掠財奪糧,連廚房香料也不放過,把搶來的香料用來醃制雞肉,味道一吃就令人難以忘記,湖南土匪雞翼就此傳頌四方。

主要材料:

雞翼 16支孜然粉 4-5湯匙
黑芝麻 1湯匙

調味料:

孜然粉 2茶匙老抽 2茶匙
五香粉 ½茶匙胡椒粉 1茶匙
糖 1茶匙花雕酒 2茶匙
生抽 1茶匙蒜蓉 2茶匙
蠔油 1茶匙小辣椒 1條

做法:

1) 炒香的黑芝麻
2) 雞翼洗淨瀝乾,加所有調味醃4小時,醃過一晚也可以
3) 焗爐預熱220度,然後將雞翼遂只沾上孜然粉,並拍走多餘粉狀
4)再將預先炒香的黑芝麻灑在每隻雞翼
5)將雞翼排在網架上,焗約 10分鐘,翻轉雞翼,繼續焗約10分鐘。

完成!

Wow, looks just like Tam chai's bandit chicken wings!! But it takes so long to produce them T-T. Otherwise i would love to try make my own bandit chicken wings!! You post looks so tasty that i got a sudden urge to go to tam chai to eat the bandit chicken wings!! Keep up with the post!! I have upvoted, followed for more!!
