Hello again, friends!
As promised this is my second entry for this week's Steemit culinary challenge. Coming from a city that's surrounded by two different seas it is impossible for me to not love fish, I even eat it what some may call "raw" but I say it's salted! One of these days I might make a post and show you guys how I salt my fish :).
But today's dinner is a colorful duo of baked salmon and mango salad, it's flavorful, fresh and of course delicious! We're going to start with preparing our salmon fillet.

Oven Baked Salmon

Ingredients:

  • 0.8- 1 lb (300-450 g) salmon fillet;
  • 1 medium lemon;
  • 1 tablespoon of dried parsley flakes;
  • 1 tablespoon of dried basil leaves;
  • 6 tablespoons olive oil;
  • salt and pepper to taste;
  • 2 garlic cloves.


Directions:

In a glass or a bowl, prepare marinade by mixing garlic (minced), olive oil, basil, salt, pepper, lemon juice (cut the lemon in half and squeeze the juice out, reserve the other half for garnish, if you please) and parsley, pour over the salmon fillet and let sit for 30 minutes to an hour in a refrigerator.
Preheat oven to 375 degrees F (190 degrees C). Place the salmon fillet in the glass dish (or whatever baking pan you use), and bake 35 to 45 minutes, until easily flaked with a fork.

While our salmon is in the oven, let's proceed to the side :).

Mango Salad

Ingredients:

  • 1 lime;
  • fresh cilantro;
  • 1 ripe mango;
  • half a cucumber;
  • half of a red bell pepper (I'm going to use a little bit of an orange one too);
  • 1 jalapeno pepper, I'm only going to use a half of it.

For the dressing we're going to use some salt, black pepper, olive oil, balsamic vinegar and golden flax seeds (those are optional).

Directions:

Alright this one is super easy, let's start with our mango and slice off as much flesh as we can along the side of the pit, cut into cubes, then chop the remaining veggies and toss into a medium bowl.


Combine olive oil, balsamic vinegar and flax seeds, add to the vegetables and sprinkle some lime juice over them, the salad is ready to serve!

Beautiful dish and gorgeous sunny photos @kotturinn! That salad looks absolutely fantastic... I can imagine the sweet flavour of the mango, the crisp juicy bite of the bell pepper and cucumber, and the limey jalapeno kick... Mmmmmmm! You can post me some of this please!!!
