Peach & Almond Galette
Peaches season is finally here, y'all!
I have been seeing them in the store for quite some time now, but I wasn't buying any until just recently for some reason. Peaches by far are my favorite summer fruits, I love to just eat them fresh instead of in jellies or jams or baked goods, but I felt like baking and I didn't even have any other filling idea, but peaches, so here we go.
Ingredients
for the dough:
- 1 cup flour;
- 1/2 whole wheat flour;
- 1 tablespoon sugar;
- a pinch of salt;
- 1 stick unsalted butter;
- 1/4 cup ice water.
for the filling:
- 2-3 peaches (sliced);
- 1/2 teaspoon cinnamon;
- 2 teaspoons sugar (or to taste);
- 1 teaspoon cornstarch;
- 1 egg (for the egg wash);
- sliced almonds (optional).
Directions:
In a food processor pulse together flours, salt, sugar and butter into coarse crumbles, add water and pulse again. If you don't have a food processor you can grate the butter into the dry ingredients and work your way with a fork.
Let the dough chill in the fridge for about 30 minutes or overnight.In a mixing bowl combine peaches with cinnamon, sugar and cornstarch.
Roll the dough into a round or 2 rounds (in my case) that are about 1/8-inch thick. Layer the fruit and fold the edges around. Brush the crust with eggs wash, sprinkle with some turbinado sugar and sliced almonds.
Preheat your oven to 400 F and bake the galettes for approximately 30-35 minutes or until cooked.
Once the galettes are baked, let them cool on the wire rack and glaze the fruit with either honey or light colored jam.
Galettes are best enjoyed fresh, so I would recommend making just enough for yourself and/or your family to eat that day. Keep leftovers covered with a kitchen towel.

I'm in Canada, way over on the west coast. Vancouver Island. Here in BC we get some pretty amazing peaches, usually mid to late summer. They should be showing up in droves in a few weeks, and I can't wait!
Oh, I'm sorry, I thought you were from the US haha. I would love to visit that part of Canada, I've been to Niagara Falls and Toronto last year, it was fun.
But yeah, seasonal produce is the best, I can't wait for more fruits and veggies to become available haha

The first thing I saw when opening this photo was that peach haha I have addiction for the peach and the peach are my favorites I can eat a lot of them without getting bored I like to eat it in syrup Have you ever tried it?
This is like a candy or a cake something similar I've never tried one like this but surely this will enchant me

I think I know what you're talking about, I've seen preserved fruits in tiny jars, but to be honest with you I prefer fresh peaches better haha.

These galettes are super easy to make, I hope you get to try them whenever you feel like baking haha. You can use any kind of fruity/sweet or savory fillings as well!
