Apple & Spinach Spring Salad

Spring is finally here 🌞

Warm sunny days call for a healthy meal and this tossed veggie salad with blueberry, lemon and thyme goat cheese is a perfect start!

Ingredients:

• 1 cup spinach;
• 1 cup spring mix;
• 1 Gala apple;
• 1 radish (optional);
• 1/2 cup shredded red cabbage;
• 1/4 cup dried cranberries;
• 1/4 cup roasted walnuts;
• goat cheese for garnish;
• your favorite dressing.

Directions:

Place all the ingredients together in a bowl, top with goat cheese and flax seeds, or whatever else garnishes you prefer.

For the dressing I used a mixed of EVOO, honey and balsamic vinegar, but I think just using olive oil would work fine if you don't like the acidity of the vinegar.
