These were absolutely delicious, messy but delicious!
Vegetarian Mushroom Philly Cheese 'Steak'
Ingredients:
- 3/4 cup vegetable broth
- 1 tablespoon GF all-purpose flour (You can use regular all-purpose flour)
- 1 tablespoon soy sauce
- 2 tsp italian herb seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 tablespoon of salt (Add more, if you'd like)
- 1 teaspoon black pepper
- 1/2 tablespoon habanero oil - optional (The one I used is homemade)
- 1/2 green pepper
- 1/2 poblano pepper
- 1 medium-sized onion
- 1/2 red pepper
- 1 cup of grated sharp white cheddar (You can use provolone-the traditional way)
- 3 cups bella mushrooms
- 3 tablespoon of unsalted butter
- 1 tablespoon of olive oil
- 2 tablespoons of mayo
- 1 long french baguette
Directions
- In a large skillet, melt butter and add olive oil. Sauté onions, mushrooms, green pepper, red pepper and poblano pepper for about 7 minutes or until tender on medium heat.
In a bowl whisk vegetable broth, soy sauce, habanero oil and flour.
Slowly add the liquid mixture to the vegetables.
Season with all spices, herbs, salt, and pepper.
Turn heat to high and stir constantly. Cook for another minute or so until the sauce has thickened to your liking.
Turn stove off and remove skillet from heat.
Cut your french baguette. (You can use whatever bread you'd like)
Spread mayo and grated cheese on your choice of bread.
Place bread on a baking pan and broil for about 2 minutes or to whatever you desire your bread to look like.
Place filling into the sub.
Serve immediately. You can serve this lovely sandwich with chips, pickles and cut up fruit. (We had salt and vinegar chips and sliced mangos on the side)

This was super delicious. Surprisingly, the mushrooms didn't make it overly earthy and it had a really nice balance of earthy, savory, and bright flavors.
