Lingonberry series - The RED Porridge
This week I decided to make my first attempt at Lingonberry porridge. It turned out pretty well.
To make what I made you need:
- Approximately 500 ml lingonberries.
- Sorghum flour (Durra).
- Quinoa flour.
- Approximately 400g of organic honey.
- 1 teaspoon of salt.
- Some sort of mixer
- I put approximately 600ml water, the salt, and honey into a pot to boil.
- I used a fork to mix some water and flour in a bowl, making sure I have a liquid but and homogeneous mix.
- I crushed the berries with the mixer.
- I added the berry mix to the boiling honey-water
When the water is boiling again I added the flour/water mix to the pot, making sure to stir while adding
(If the flour mix is like a paste it will not mix well. It has to be like a thick liquid, or you will get clumps like I did).if the porridge is too thin, make more flour/water mix and add to the pot, if it is too thick add more water.
The porridge can be served with cream and/or diced almonds.
It can also be stored for months in a glas jar.
