Shabu Shabu is my other favorite dish from JP. Basically you get a hotpot with water, then you make it boiling and put inside meat and vegetables for shorter or longer periods and eat.
On the end you drink the soup made of this fast cooking of stuff.
In Japan they most often give wagyu or pork for decent Shabu SHabu i in EU ive seen chicken to also be popular.

Ok so every culture has their own version of a hot pot..the secret is in the broth, how good is their broth?
I loved it but how you do it here is take this amazing beef, put for 5-10 seconds into boilign water, dip in sou or ponzu sauce and eat :) So the beef here was the killer, top quality. Broth i care more in Ramen (obviously) or Pho.
I will check Korean hotpot soon, didnt have a chance but i know where to hit one

This is good for general purpose hotpot but IMHO, Thai hotpot is the best. The spice, the Tom Yum, the taste of meat and sea foods in the broth, the vegetable. If hotpot was a gift from god, Thai hotpot is heavenly divine.
One should learn make hotpot at home. The more you use that pot soup for boiling meat and veggies, the tastier it gets. As long as you don't contaminate your pot by putting your eating utensils in there, the soup the day after is so nice. It has the sweet of bok choy, fillet beef, shrimp, a spiciness of pepper. You could just boil that soup and add it to instant noodles without all the powder base. Makes me hungry just thinking about it.
