[Homemade] Grilled kalbi. Korean-style beef short ribs.
made this before from store-bought marinade, but this is my first try with a homemade marinade. The marinade is made from 1/4 cup brown sugar, 1/4 soy sauce, 1/4 cup mirin, 1 Asian pear, 2 cloves of garlic and 2 tsp red pepper flakes. Marinade goes over 3 lbs or flanken-cut beef short ribs for 24 hours in the fridge. Before dinner time, set up your grill for direct heat and preheat for 10 minutes. Remove ribs from marinade and blot off marinade from rib surface. You want the surface as dry as possible to maximize your browning. Cook ribs over direct heat, flipping frequently until surface is browned and a meat thermometer measures 130 degrees F. Rest 5 minutes before serving. Edit: I forgot about a knob of ginger in the marinade, about equal to the volume of garlic. Marinade goes in the blender for a swirl before being applied to meat.
the sear you've got on it makes me drool. I'm Korean and yours look a lot better than the ones I usually eat lol.
To be more precise. These are called LA Kalbi. Made in Koreatown Los Angeles. Don't really find meat cut like this in Korea. And if you do, they call it LA Kalbi.
I've also heard it called "Rosary cut" short ribs. Very succulent and buttery tasting cut.
if u were Korean these would just simply be "grilled short ribs"
u don't make tacos at home and say "hey I made 'Mexican style ' tacos.
Some folks may not know what kalbi is. If someone didn't know what a taco was (sad state of affairs), I would say meat with Mexican seasonings in a corn or flour flatbread.
This is my favorite food. A lot of food is a meal. You can taste by eating Sabai.
