No doubt. Bake a couple potatoes, make gravy out of the stock, and carrots on the side.

Get Crock Pot
Add beef broth
Add thawed roast beef
add carrots and other veggies
cook for hours (4+)
Eat.

You'll want a hunk of meat of some sort and some herbs like bay leaf, rosemary, thyme and/or sage, but that's basically it. Everything else is really just a variation on the theme.
And if you have time, the night before you can bring it or throw on some marinade/dry rub.

Sorry, forgot a recipe!

2-3 lb chuck roast baby carrots chopped celery and onion veg. oil 2 packets of Lipton onion soup 1 tbsp cornstarch stalks of rosemary, sage, thyme

Wash and chop veggies. Toss with a tbsp of vegetable oil or just enough to coat. In a small bowl, combine the powdered soup packets and cornstarch. Coat the veggies with this mixture and put them in the bottom of a large roasting pan. Top with the roast. Place herb stalks on top of the roast. Cook at 325 for at least two hours or until fork tender :D
What's the liquid? Just juices or water or broth?
