[Homemade] Carne Asada with salsa roja and fresh corn tortillas.

That's some proper homemade Mexican right there.
I don’t really follow recipes for this kind of stuff but the general gist:

For the Meat... Step 1: acquire meat (I typically use skirt steak) Step 2: marinate your meat. I usually throw in about 4-6 cloves of garlic, half an onion, 2 limes, Worcestershire and red wine vinegar to taste, and a little bit of brown mustard. Blend that shit up and slather it on your meat. Let that bitch sit in the fridge for about an hour.
Step 3: grill your meat. I like a little pink in the middle so I’ll usually go for about 3-5 mins on each side on a good flame. Step 4: Set aside in foil until ready to serve. You want to dice it up right before you make your tacos so you preserve all those juices (aka flavor).

For the Salsa... Step 1: do you like to feel the burn? If yes, proceed to step 2, if no, then just eat your meat without salsa and don’t you go and fuck up these tacos with store-bought salsa. That shit will take over the entire flavor of what you’re cooking.
Step 2: rinse about 4-5 tomatoes, 8-10 red jalapeños, and about half an onion. Set that shit to boil with some salt. Step 3: while that’s boiling, roast half a head of garlic. I do this by just slicing off the top of the head with a knife, drizzle some olive oil on the open cloves, wrap it in foil, and put it in the oven at around 350-375 depending on your mood. It’s fine when you can smell the toasty garlic and the cloves are a soft mushy brown consistency. Step 4: combine all that awesome shit (boiled tomatoes, peppers, onion, and roasted garlic) in a blender and set it to 11. Generously season with salt and pepper. You can add diced avocado like I did you want. It adds a nice contrast to the spiciness of the salsa.

For the tortillas.. disclaimer There is a HUGE difference in experience between store-bought tortillas and home made ones. Huge. Like really Yuge. Put in he work to make them and you’ll know. Step 1: obtain Maseca (you may need to visit the Mexican aisle or hit up a Mexican market) Step 2: while you’re at the Mexican market, pick up a tortilla press if you don’t already have one (they are like $10-15) Step 3: gradually add water to your maseca until you have a consistency that allows you to easily mold little balls while not so watery that the dough sticks to your skin. (This process takes some trial and error) Step 4: line you’re tortilla press with something nonstick like a couple pieces of plastic wrap or something similar. Put the ball of dough in there, crank that lever, and you have a little tortilla. Step 5: making sure the pan is HOT (this is actually very important) place the little guy on there for a minute, flip, give him a little pat for being a good voice, and cook the other side. Your tortillas should have just a little browning on them. Flip and repeat until desired “crookedness”

Lastly: combine all and enjoy! As a side note, I also grilled up some onion while my meat was cooking and added it as a topping as well. Additionally, Cilantro is a must! Chop that stuff up and generously sprinkle on your tacos as a nice finish.

Also, none of this stuff is a hard-coded recipe, so have fun with it. Add your own flair, switch some things up, figure out you’re own perfect tacos :) Just remember, the secret to good Mexican cooking is simplicity and fresh ingredients. Avoid pre-made Mexican shit from the store. It’s honestly all garbage.
