12. Philippine Breakfast or Snacks of what we call "CHAMPURRADO"

This CHAMPURRADO recipe Filipino version is a sweet chocolate rice porridge (Lugaw), a popular Filipino breakfast or snack, and often served hot with Tuyo (Salted Dried Fish). It is made from glutinous rice (locally known as malagkit) or ordinary rice if not available, Cocoa Powder or any available chocolate powder that you have and Sugar. A more traditional approach would be using tableya (pure cocoa blocks) instead of cocoa powder. Milk is added to make it creamy if you have.


For the Ingredients:

  • 2 cups Glutinous Rice, washed
  • 10 cups Water
  • 6 tablespoons Cocoa Powder dissolved in 1 cup water
  • 1 can Condensed Milk
  • 1/4 cup Sugar
  • 1 tablespoon Instant Coffee(Optional), dissolved with the cocoa powder
  • pinch of salt

1. Boil the water and add the glutinous rice.

2. Cook for 10 - 15 minutes until the rice has fully absorbed the water, mixing occasionally.

3. Add the dissolved cocoa powder or any chocolate powder available, instant coffee, condensed milk, sugar and pinch of salt.

4. Cook for 5 minutes or until everything is thoroughly mixed. Add a little water if the mix is too thick.

5. Ready to serve hot as it is or with Tuyo.
