Ottoman Toffee paste – Traditional Ottoman cady ( Macun)
Macun is a gooey, sweet and colorful Traditinal Turkish toffe paste, as known in Turkish ‘Macun’.
It was commonly selling on the streets when the Ottoman period. It’s actually street food. It’s usually preferred by children and served wrapped on a small wodden stick. It was consumed as a pharmacetical medicine beacuse it’s heallty not like the candys selling in the supermarkets
.
Ingredients;
3 cups of sugar
1,5 lemon juice
Half cup of water
Orange peel and juice
Ginger, cloves powder
Mint oil
Food coloring
Hibiscus powder
Add the sugar, lemon juice and the water into a pot and cook it. And then mix it until it become like macun or wax.
I will give you 4 type of Macun, with orange,with lemon and with mint. So, when the mix is ready, pour into three different tray equally.
Macun with mint : Pour 1 tea spoon mint oil and food coloring(its not necceriy) and make it homogeneous.
Macun with orange : Add orange peel and juice into ( 1 orange)and also giger a blender and mix it. When its ready, mix it in tray.
Macun with lemon : : Add lemon peel and juice into ( 1 lemon) and also cloves powder(1 tsp)
a blender and mix it. When its ready, mix it in tray.
Macun with red color : Add some hibiscus powder and cloves powder and then mix it in the tray.
When it cooled off, you can served with wrapped on a wodden stick or with another way. It’s up to you.
