Definitely A classic, of French cuisine. Coming from Nice, originally it was made only with raw vegetables. But over time and different cuisines, has been incorporating new ingredients such as green beans and steamed potatoes, although it is true that in its French version are still unused ingredients.

Ingredients for the salad:

3 small tomatoes, 1 spring onion, ½ small red pepper, 2 eggs, 180 g of canned tuna, 8 anchovy fillets, 12 black olives, 100 g of round green beans, 4 new potatoes, 1 tablespoon of capers, 1 lettuce or 100 g of lettuce, salt and pepper mixture

For the vinaigrette:

1 tablespoon of Dijon mustard, 4 tablespoons of olive oil, 2 tablespoons of white vinegar.

We start by steaming the potatoes, when they are a few minutes before they are cooked, toss the beans and leave them until they are al dente. In another small pot we cook the eggs. Meanwhile, we wash the vegetables and cut them into pieces.

In a tray we make a bed with the lettuce, we add the chopped tomatoes, the capers, the pepper in pieces, the chopped olives and the chive in strips. When they cool a little, we toss the potatoes, the green beans and the hard boiled eggs in pieces, finally the drained tuna of their oil and the anchovies. We pepper.

To make the vinaigrette, in a bowl we toss a spoonful of mustard, add the vinegar and mix and finally add the oil. We stir with some rods until everything comes together. We spread for the salad.
