Oatmeal and banana pancakes, for a healthy breakfast
The breakfast is the most important moment of the day in which we must feed well, although we must adapt to our budget, this alternative, as well as delicious, reduces the consumption of white flour.
Ingredients for eight pieces
200g of natural oats, 1 egg, 1 banana, 200ml of coconut milk, 5g of baking powder, 50g of brown sugar, 1 teaspoon (coffee) of cinnamon powder, vegetable oil and a pinch of salt. To serve we will also need some bananas, some strawberries and honey.
How to make oatmeal and banana pancakes
To make this recipe we are going to mix oats with baking powder, cinnamon and sugar. Blend well until a consistency similar to that of a slightly thick flour. Then we add the coconut milk and the egg. We beat very well until everything is integrated into a homogeneous and somewhat thick mixture.
Heat a few drops of vegetable oil in a non-stick pan. When it is hot, pour it into the equivalent of a soup ladle of dough. We leave about three to four minutes until it begins to bubble. We flip the pancake and leave another three to four minutes on the other side. We serve hot with strawberries, banana and honey.
