Authentic Indian Food : Part#1 Punjabi Chole Bhature

Hi friends,

From the last few years, I'm living away from my family for job. I have grown up in a typical Indian family, I bound myself from kitchen as I did not like to cook much . Whenever, my mom used to say to cook anything I always made annoying faces because that was an area which I never sought to gain any interest and neither was any such idea which encourage me.

But , when I started living alone become mostly dependent on all time maggi, junk foods which lead to my weight gain. But eventually the nostalgia for home food started . That was my case till I discovered the world of food . I used to learn recipes with the help of google or sometimes by mom on phone call. Thats how, I started my cullinary journey and after that anything was the limit. I learned almost every indian dish and many more which now satisfy my hunger and I save lot on money also. Today, I'm here to share with you the most popular dish of north india .

This recipe obviously is a mouth watering dish and will satisfy your hunger . I will share with you how to make this recipe in less time and with great taste .

Ingredients to make bhature :

Flour (2.5 cups for 2 person)
Baking soda
Warm water
Oil ( can be any of your choice)
1 table spoon salt or as required
1/2 cup Yogurt

Ingredients to make chole (White chick peas)

2 cup White chick peas (Chole) soaked overnight in water
2 cinnamon sticks
4-5 Black cardamom
1 large indian bay leaf
1 teaspoon ginger garlic paste
3 tea begs
1/4 baking soda, optional
Salt as required
1 large Chopped onion
3-4 medium sized chopped tomatoes'
4-5 chopped green chillies
2 teaspoon coriander powder
2 teaspoon cumin powder
2 teaspoon mango powder
1 teaspoon red chilli powder
2 table garam masala
Coriander leaves

What is bhatura : Bhatura is a fried leavened Indian bread made with all purpose flour .

How to make bhatura :

Making bhatura dough:

Sieve the all purpose flour with baking soda and salt

Add the yogurt and mix it well.

Add very little water , just abut 1/2 tbsp to knead it

knead the dough, make a smooth and soft dough.

Cover the dough with wet napkin and keep it aside for 2 hours.

Frying bhatura:

Heat oil in a deep frying pan

Make small to medium sized balls fom dough

Take a ball and make them flat with the help of rolling pad

When the oil is hot enough then place the bhatura gently into the oil
.
Bhatura will puff up , when the bhatura become light brown , remove ad drain it on the kitchen paper

Make more bhaturas same way and serve it hot with chole.

How to make chole ( White chick peas )

Cooking chole :

Firstly, soak the dried chick peas overnight in enough water .

Next day, pressure cook the overnight soaked white chick peas by adding the salt and adding 3 tea bags tightly packed in thin cloth .

Pressure cook for -9 minutes or till the time its completely cooked.

Strain the chick peas, and remove the tea bags.

Making Chole (White chick peas):

In a large pan, heat oil and then add chopped onions , fry them till they become golden brown.

Add slit chillies and fry them and all masala powder mentioned above .

Add the chopped tomatoes and chopped ginger saute them till tomatoes become soft and marshy.

Add the cooked chole and saute them for 5-6 minutes.

Now add the strain stock about 2.5 litres and if the stock is less you can add some water .

Cook the whole mixture and stir it .

When the chole gravy thickens , check salt and add more if you find less salt

Serve cooked chole by adding some coriander leaves on it with hot bhaturas .
