Tuan Yuan "Bak Tuk Teh" - Famous delicacy in Singapore
Have you heard of "Bak Tuk Teh" 肉骨茶 - although it has a tea in the mandarin terms, but there is no tea involved.
It is a pork rib soup very popular both in Malaysia and Singapore, enjoyed by Hokkien and Teochew community, also in some neighbouring areas like Southern Thailand.
Translates directly from hokkien(dialect) as "meat bone tea". Main ingredient is pork ribs - simmered in broth of herbs and/or spices. Although the term name is "Bak Tuk Teh" but there are different types, difference is in how the soup base is prepared. In Singapore, our soup base is more peppery with garlic which is spicy - in clear soup.
The Malaysian style involves more chinese herbs (including star anise, cinnamon, cloves, dang gui, fennel seeds and garlic) The soup base take hours to cook.
"Bak Tuk Teh" is often served with fried dough called "you cha kueh" it is simply a fried snack that goes along with the dish. Because the dough itself does not have taste, dip this fried snack into the soup base, letting the snack absorb all the goodness, giving it a hell lot of flavors. *it is a must try if you are trying out Bak Tuk Teh"
As this dish consist mainly pork, so it is often served along with "Oolong tea" , that helps to digest the fats.
After being on cruise for 4 days, i have been craving for some Singapore Local taste. So i decided to head for "Bak Tuk Teh". A warm dish , flavor boosting dish - excellent to go with a bowl of rice.
There are many Bak Tuk Teh store with chain outlets islandwide, we chose "Tuan Yuan" because of the recent epsoide that was featured on "Channel U" - featuring the love story of the founder of this restaurant.
Look he is also featured on both English and Chinese Newspaper

We orderd "Bak Tuk Teh" & "Fried Tou Kee" - we are also served with another bowl of soup. People having Bak Tuk Teh tend to have more soup - so thoughtful of them. Very generous with re-filling soup !!!

Not a common dish to go with bak tuh teh, but is a new item on menu i guess.

With all the brewing processes, the meat has lost its flavors to the soup, therefore it is recommended to dip into the soya sauce to spice up the taste in meat. Some fresh cut chilli too if you can take spicy.

Yum! I would like to try out the broth; i love garlic. I've been to Singapore once only and I didn't get to try many food; didn't know where to go or what to try.
