Ampalaya with Scrambled Eggs

Hello Steemians! 👋😌
My mother cooked Ampalaya with Scrambled Eggs for our breakfast. She woke up at 05:30 in the morning 🌞 to cook food and prepare herself in going to the office. As I have mentioned on my previous article, I am not a good cook. So, I allow other people to cook for me, and I am pleased to munch them. Breakfast became part of our daily routine. It is a martial law in our house to finish your breakfast first before leaving, else you can not leave. Skipping breakfast in our house is considered a mortal sin. Whether you eat bread, oats, cookies, energy bar or drink milk, you have to fill your stomach first thing in the morning. It is necessary to obey that rule because breakfast supplies the energy that we need for our daily task. It is essential to provide the vitamins, minerals, nutrients and supplements needed by our body.

Ampalaya with scrambled eggs is not a common food for breakfast in the culture of many Filipinos. It was most likely to be eaten either lunch or dinner because it is time-consuming to prepare. You first wash the Ampalaya, cut it in half, gather the seeds and throw them. After eliminating the seeds, you cut them into strips crosswise and soak it into water to lessen the bitter taste it extracts. Heat the pan (until heat is distribited) and put a tbsp of olive oil. Saute the onion first, and then the garlic until it produces a golden brown color. Add the Ampalaya strips. Add 2 beaten eggs. Mix while gradually raising the flame of your cooking stove. Make sure to have the eggs finely separated. Add salt and pepper to taste. Cover the pan and turn off the heat. The contained heat inside the pan will cook the remaining part. Settle for 10minutes. Open the pan and "taadaan!" (magical sound effect)... You are now ready to eat. 🍴

As for the health benefits, Ampalaya or bitter melon (momordica charantia) is commonly known for decreasing high-level of blood sugar. Scrambled eggs is a good source of protein. But too much of its egg yolk will increase cholesterol. Onions and garlic are antibiotics and antioxidants that help treat wounds and strengthen the body's immune system.
