Egg whites or clear eggs trick

Today i made a clear egg omelette or egg white omelette. There is a easy trick to using less eggs. I learned this old school trick from an old school French chef. If you put the eggs in your pocket for about 35 mins, it will yield more egg. There is a science to this but just know, it works well and saves a little money. Also if you dont want to break the eggs i suggest just leaving it in a warm part of your kitchen for 45 mins to an hour. By warming the egg to room temperature it does two things. One, it makes it easier to discard the yolks. And two, it yeilds more egg, how much depends on size of the eggs, freshness and humidity. The more humid outside the less time you will need to reach room temperature. If your skeptical make two eggs straight from the refrigerator, then try one egg at room temperature. Have fun enjoy.
