Beef mixed with vegetable stew served with rice
For today global challenge am going to show you how to prepare one of my family traditional dishes that I used to love when I was growing up. It’s a Kenyan dish, a mix of vegetables and beef served with rice
Ingredients
• Beef
• Rice
• 4 Carrots
• 3 Bell pepper
• 1 Onion
• 3 Tomatoes
• Turmeric
• Ginger
• Garlic
• 1 Lime
• Sweet potatoes
Chop the various ingredients and place them in separate containers ready for cooking
Preparations
• Fry the beef in a pot with the onions first for thirty minutes until is cooked on the inside well
• Take the turmeric, ginger and garlic and crush them using pestle and mortar until they its like a paste and then press the lime into the spice mix
• Add the spices to the mix and stir until the meat has the aroma of the spices oozing and cover for five minutes,
• Add the tomatoes and carrots to the mix and cover for another 5 minutes, bring the flame down and let slow cook for 30 minutes
• Add some water and then bring up the flame for it to boil
• Then add the sweet potatoes and let it cook until the sweet potatoes are soft the add the bell pepper and the tun off the stove
• In a separate pot boils some water and add some oil and salt
• Add the rice and let it cook until ready
