Thailand Treats! Street Desserts in PhuketsteemCreated with Sketch.

Blue skies, crystal waters and the freshest fruit and veggies on every street corner. This is Phuket, Thailand every single day. But after an early swim and downing a bottle of a local beer, my wife and I were on the prowl for something sweet and delicious.

Being away from the bustle of Patong beach is something I wanted. Less noise and less pollution. I figured that living without street food is somthing I'd put up with but to my surprise there were plenty little carts setup along Kamala Beach. They all had their own specialties but I was determined to find the perfect beach dessert.

The wife and I discovered a little cart with a sign which read "Pancakes". It was kitted out with hanging fruit and boxes of ingredients that looked like it had just come in fresh from the farm. Now I grew up with a western take on what pancakes should be so I was more than curious to see what these pancakes were about.

First the base. The young woman who owned the cart scooped up her mix and spread in thinkly across a hot metal plate. She then added a dollop of Nutella chocolate spread. It began to get interesting when she plucked a banana straight off her cart decor, peeled it and sliced it over the pancake. Next came some pre-cut mangos. At this point the smell hits you and, if you aren't already, you begin to salivate like crazy.

Once the filling is in she neatly folds up the pancake and adds a second layer of nutella. To top it off, sweetened condensed milk is added. The freshness of the ingredients adds a whole new dimension of flavour. Delicious!

While I was distracted by the pancake, my wife made a little discovery of her own. The cart behind me was slicing up slightly raw mangos. They were soaked in a chilli vinegar but the mangos still had a little crunch to them. It was served with a mix that looked like sand. It was actually a combination of cane sugar, salt and chilli powder. Sweet, fruity, crunchy with a little heat. Oh how I miss Phuket.
