I slightly remember seeing this episode. The two older people were the owners and thought they knew the only way to make burgers, which were terrible by the way. The chef they had hired, could only cook the burgers the way the owners saw fit. The burger Ramsay had in this clip was requested after he heard that the chef was a real chef and actually knew how to cook. So Ramsay had the chef make the burger how it was supposed to be made.
