Those breakfast tacos are taking too long.

Saturday at my job means a lot of things.

It means we will be slow in the morning and busy in the afternoon and at night.

It means crying kids and highchairs and grumpy adults that watch over them.

It means college football games and people drinking beer after beer at the bar.

The most important thing it means to us as restaurant workers though is breakfast tacos.

You see, every Saturday morning the gang in the back make a delicious batch of breakfast tacos.

They are usually made from chicken, egg, and chorizo with a variety of different spices and sauces involved.

Often times these tacos will be ready shortly after everyone gets to work.

Most of us don't even bother to eat breakfast on Saturday because we are already looking forward to these tacos on Friday night.

Today we all got to work and started working away greeting tables, seating tables, talking to people, and being general restaurant workers.

By 12:30 though the tacos still weren't ready.

Several of us were grumpy and upset. I guess we just got used to having them when we get to work in the morning.

Where are the tacos? That was the common sentiment.

Finally by 1:00 the tacos were ready we were all absolutely famished.

They looked amazing and sure enough they were chicken, egg, and chorizo with some kind of red sauce.

They were even better than they usually are.

Most of the servers put cheese on theirs but I decided not to do that because I didn't want to overwhelm the already amazing flavor.

I'm glad we finally got our tacos because it is true those breakfast tacos were taking too long.
