- 1/2 cup Raw Asparagus
- 3/4 cup Raw Eggplant
- 1/4 cup Raw Radishes
- 1/2 tbsp Oil, sesame
- 1 tsp Soy Sauce, low sodium
- 1 tsp Vinegar, rice
- 1/4 tsp Crushed Red Pepper Flakes
- Prep the ingredients and set aside: Thinly slice the eggplant and radishes. Chop asparagus into bite-sized pieces.
- Heat a skillet on medium-high heat and add sesame oil.
- Add eggplant, radishes, and asparagus along with the soy sauce, rice vinegar, and red pepper flakes. Stir.
- Saute until vegetables are tender. Remove from heat and enjoy!
