Whats COOKING GOOD LOOKING - It is ALWAYS a good day for STEAK! YUM!!!
On Sundays, we generally have a braai or do a roast on the fire,
but yesterday felt like a steak kind of day... hehehe!
So steak it was...
NOMNESS!!
ROSEMARY & RUBBED STEAK WITH MUSHROOM, PEPPER & CHILLI SAUCE
......
FOR THE SAUCE...
I know many people will opt for a packet sauce,
but I am not that kinda gal...
I prefer to make it from scratch.
So in a pot, you melt about a heaped tablespoon of butter,
add the pepper, chilli and a half a chicken stock cube...
Once melted, add about a heaped tablespoon of
all purpose flour or self-raising flour (does not matter which)
and stir it with a whisk until it becomes a paste
Gradually add a 250ml tub of fresh cream
and keep stirring...
Do not walk away and leave it because it WILL burn
Once the mixture reaches the boil,
it will thicken nicely.
If it becomes a little too thick for your liking,
you can add some milk to thin it down...
Once at the consistency you like,
remove it from the heat,
and gradually add about a handful of grated cheese.
Don't add all the cheese at once,
as this will cool the mixture too quickly,
and the cheese wont melt nicely.
Also, do NOT add the cheese when still on the heat.
Once done with the sauce, place it to one side
and fry up some sliced mushrooms..
They are ready when they look
like this.... lol!
Once done frying,
you can add them to the sauce
and stir them in.
OK IT'S STEAK TIME!!!

Rub the steaks with a little olive oil
and then season with
freshly chopped rosemary, and a little salt.
I would normally season with ground black pepper too,
but as the sauce is quite hot, I did not think it necessary
I am a lover of RARE steak,
so after heating the griddle for approx. 30min
I cook the steaks for 2 min per side
and then brown the fat side.
If you want a medium to well done steak,
4 - 6 minutes per side should be adequate.
Once the steaks are done,
put them to one side to rest for approx. 5 min.
Yesterday I served these with
seasoned cous cous and mixed veg rounds
and a fresh green salad...
with kale and baby spinach.
Personally, I will choose baby spinach over lettuce, ANY DAY!
