This is a great tutorial! I love your skewer method to keep the lid propped - I do the same thing! (It also protects your stovetop from all of the tomato splatter too!) I've got a ton of tomatoes - maybe I'll think about making ketchup. Can you store it at room temp? Do you process your jars before finishing?

If you pour HOT (as almost boiling) ketchup into the jars, no need to process them later.
And you can store them at room temperature but make sure the lids are sealed.
I store them in my basement cold room.
