IKEA-Inspired Couscous
I'm all about quick and easy dishes, so here we go again! Quick and easy doesn't exclude deliciousness, here's another proof of that. Heat your pan and get ready for this easy peasy meal!
IKEA-Inspired Coucous • 4-5 servings
INGREDIENTS:
1 ⅓ cups (3 dl) dry couscous
vegetable stock
bag (500 grams) of frozen wok vegetables (add even more I you wish 😉)
1 cup (2 ½ dl) dry green lentils
approx. 3 tbsp olive oil
2 tsp ground turmeric
1 tsp curry powder
salt and pepper to taste
INSTRUCTIONS:
Cook the couscous in vegetable stock according to the package instructions. Simultaneously, cook the lentils and the wok vegetables according to the package instructions. Once the couscous is ready, mix in the olive oil, seasonings, and add the cooked lentils and wokked vegetables. Mix everything well together, and serve! 😋
Almost forgot to mention how I came up with the name. A while ago I went to IKEA, and ate the vegan meal they had to offer. It was vegetable balls with this kind of couscous side dish. I thought it would make a great dish if the couscous-vegetable-lentils ratio was adjusted a little (at IKEA is was mainly couscous). So, I this is what I ended up with, and I'm fully satisfied with the outcome. I hope you like it too! 😊
