Cooking Recipes: Rice Pudding
Hello my friends, aloha. No, I'm not in Hawaii. I just like the greeting, don't you? Over the years I've discovered A LOT of recipes like how to make rice pudding. Variants can be used either as the main dish or dessert.
The one we'll make today is a dessert pudding and here's what you'll need:
. 480 ml water
. 200 gms Arborio rice
. 720 ml vanilla soy milk/almond milk
. 50 gms sugar
. A pinch of salt
. One cinnamon stick
. 1/2 tsp vanilla extract
. 1/2 tsp ground cinnamon and more for dusting
. 1/4 tsp ground nutmeg
. 40 ml sweet condensed milk
After you have all the above or suitable substitutes:
. Preheat the oven to 190º C
. In a medium-sized oven-proof saucepan, boil the water.
. Add the rice, cover, and simmer for twenty minutes or until it is almost ready
. Mix the soy/almond milk, sugar and water in a large bowl
. Once the rice is cooked and still hot, add the milk mixture and cinnamon stick
. Cover and place in the oven. Bake for 45 minutes
. Afterward, remove from oven, uncover, and remove the cinnamon stick.
. Mix in the vanilla, nutmeg, and cinnamon
. You will notice that pudding is somewhat liquidy. As it cools off though, it will thicken as most of it will be absorbed by the rice
. Serve in small bowls and drizzle each with some condensed milk and if you prefer, dust with some cinnamon and or nutmeg. You could also add some berries for decor and to sweeten the taste.

Janna what a fabulous recipe.I love rice pudding.Something so comforting as the dessert reminds me of my childhood.My mum use to make an indian version using most of your ingredients in your recipe but also containing cardomam pods.When I get a chance I will defo try this one out with the kids! I love rice pudding. It's a good dish to make when you've got left-over rice. I've never used Arborio rice so I'll need to look for it in a health store.
