Delicious Cheesecake!

Today is Friday and here in the CDMX is cloudy.
On days like this I'm overwhelmed with the desire to bake, so I gave myself the task of writing this delicious recipe to prepare today!
In Mexico there are very few Cheescake Factorys, and the cheese pies sold in the city are very different from the ones served at this restaurant, so I went to the task of looking for recipes and trying them out Find the one that most resembled the one served there.
This is my final version enjoy it as much as me and my family!
Ingredients
¼ cup finely ground or finely chopped almonds
½ cup ground Graham crackers (preferably ginger-flavored)
½ cup ground vanilla biscuits
90 grams of melted butter
1 kilo cream cheese at room temperature (philadelphia type)
1 cup and ⅓ cup refined sugar
5 large eggs at room temperature
¼ cup flour
2 tablespoons lemon juice
2 tablespoons vanilla
475 milliliters of sour cream or Greek natural yogurt
Preparation (at this point preheat the oven to 325 ° F or 163 ° C)
Mix the almonds, the two types of cookies and the butter, empty in a mold (9 inches and preferably removable) and create a crust well compacted in the bottom, reserve in refrigeration.
Then beat the cheese slowly adding the eggs one by one, then the lemon juice, the vanilla and finally the flour. Incorporate well and check the consistency, (it should not be too thick or too liquid, should look like a pudding), if it is too thick add little by little to cream until achieving the desired consistency.
Bake for 1 1/2 hours (or until it has set). Allow to cool completely inside the oven, on leaving it should be refrigerated for at least 4 hours. After this it is possible to unmold.
As an accompaniment you can add any jam or sweet sauce of the flavor that you prefer, I personally love making my own blackberry sauce, although also perfect with any of the grocery store.
Tips !!
- New York style cheesecake tends to break easily with temperature changes, so try to use everything at room temperature.
- As I mentioned before it is delicious with any sweet fruit sauce, but if you do it, it is a delicious combination that you serve the cold cheesecake and the hot sauce!
- Before creating the crust of the cake you can grease a mold with butter or oil spray and you will be easier to unmold.
- If you do not have a removable mold you can use a normal mold and paper it with wax paper and it will be easier for you to unmold.
