TGIF: My Favorite Recipes: Roasted Pork Belly
This is a traditional Chinese dish and very well perceived during party time.
Ingredients:
Pork belly 3 - 4 lbs
Coarse salt
Brown sugar 7 tsp
Chili powder 2 tsp
Sea salt 1 tsp
Garlic powder 1 tsp
Baking soda 1 tsp
Procedures:
1. Blend brown sugar, chili powder, sea salt and garlic powder. Rub it over on the pork belly and let it marinate in fridge overnight.
2. Preheat oven to 400 F, put 1" deep water in a baking pan, then put the marinated pork belly skin down in, cover the pan with foil and bake for 45 minutes.
3. After time is up, flip the pork belly upside down with the skin side up, cover the bottom with foil and only skin exposed, use a fork to poke lots of holes on the skin.
4. Smear 1 tsp of baking soda on skin, then cover it with coarse salt. Then set oven to 450 F, bake for 45 minutes.
5. When time is up, take it out, get rid of the foil, put the belly on a baking rack, set oven to 430 F, bake for 20 minutes. You should hear belly skin cracking during this time.
