Cheddar potato cauliflower soup

My fellow Steemians; greetings. A hot soup on a chilly day hits the spot. It can even be a soup that is good for you. incorporating cauliflower and potato and other nutritious ingredients. Frankly this one came about because I had both potatoes and cauliflower to use up and I hate wasting food.

The ingredients:

3lbs yellow potatoes
1 small cauliflower
1 box vegetable broth
2 tablespoons italiano seasoning
6 cloves of garlic
1 and a half cups water
1 cup sour cream
2 cups shredded tex mex cheese
salt and pepper to taste
parsley, pumpkin seeds, more cheese, and a dollop of sour cream for garnish

Cube the potatoes and cut the cauliflower into flowerettes. Put them into a large pot with the vegetable broth, italiano seasoning. Chop the garlic and add it to mixture. Top up with water. Season with salt and pepper to taste. Bring to a boil. When potatoes and cauliflower are tender remove from heat. Stir in the sour cream and cheddar cheese. Garnish with toppings and serve.

It both freezes well and reheats well. Makes about 4 servings. (I really like big bowls of soup so for others there may be more servings :))

For the lactose intolerant this recipe can be made dairy free by omitting the cheese and sour cream and still be a tasty appetizer. However, I have found without the dairy the seasoning tastes much stronger so you may want to reduce that ingredient.
