SALMON AND POTATO SALAD WITH LEMON POPPY SEED DRESSING
This light and colourful potato salad is perfect for summer entertaining.
INGREDIENTS
750g chat potatoes
100g snowpeas, trimmed and halved
100g smoked salmon, cut into thin strips
1/2 yellow capsicum, cut into strips
2/3 cup natural yoghurt
1 tablespoon lemon juice
1 teaspoon finely grated lemon rind
2 teaspoons poppy seeds
salt and freshly ground black pepper, to taste
METHOD
Boil potatoes until just tender. Add snowpeas to saucepan and cook for 1 minute and drain under cold running water. Allow to cool.
Halve potatoes and arrange in a serving bowl with snowpeas, salmon and capsicum.
Combine yoghurt, lemon juice, rind and poppy seeds, season to taste and drizzle over salad.
