Okay,
since it is the start to yet another weekend - which is going to continue to 2 mad fuckin nights and back to yet another fuckallllll day of work on monday!!! , i thought let me spend the day with cooking some good lunch and feast myself with my favorite food :) foodgasm before some OR***M ;)
perfect way to start a happy and relaxed weekend before all the noisy late nights??

Sooooooooooooooo i decided to cook delicious BIRYANI for myself. (specialty of my Late Mother REBORN !!)

Before i speak about the BIRYANI i cooked ,let me tel you a little about Biryani!

Biryani is a very famous rice dish, which is made with a lot of different spices and methods of cooking.
It was originated with the Muslim in Indian sub-continent.
It is a famous Indian dish around the globe.

Back to the Biryani i cooked!

So this is a very special dish to me, as it is 1 of the first dishes i learnt cooking from my mother.
And mind you this is very ADDICTIVE :P

This way of cooking Biryani is called DUM-BIRYANI !! ( you could look up google for types of biryani's)

It is a traditional way of cooking Biryani and counted as 1 of the best ways to cook Biryani.

Ingredients :

Meat - 1Kg (of your choice)
Onion - 1Kg
Tomato - 1Kg
Coriander leaves - 50gms chopped
Mint leaves - 50gms chopped
Basmati rice - 1Kg
(preferable)
Green chili - 5 pieces
Ginger and garlic - 2 tbl spoons
paste
Salt, Red chili - 2 t spoons
Turmeric - 1 t spoon
Lemon - 4 pieces
Yogurt - 250 ml
Fresh ground - 50 gms
Coconut
Cardamom,Clove - 10 pieces
Cassia - 3 leaves
Cinnamon - 3 pieces
Oil - 500 ml

Preparation :

So the preparation looks simple, but it requires patience. There is a very famous HINDI saying which goes - "sabhar ka phal meetha hota hai" which means "The reward of patience is always fruitful"

I call this technique SLOW and STEADY Win the MEAL!

Will explain in the most simple way so all can cook and enjoy this delicacy !!

Take a moderately big vessel - (This is for about 5-6 people. Please comment below with the pax so i could help you with modifications in the ingredients)

VESSEL 1 !

Heat the OIL
Add the ONIONS into it after oil is boiling
Add the cinnamon ,cloves ,cassia ,cardamom into the vessel
Patience till onions are caramelized then add salt,Chili powder and chopped, turmeric powder
Add ginger garlic paste, yogurt and grounded coconut.
Add chopped tomatoes
Cook till flavors make you faint ( 12-15 mins )

VESSEL 2 !

Heat water till boiling with mint leaves in it.
Add soaked rice in boiling water ( soak rice for 30mins)
Add salt (3 - t spoons)
Patience till only half cooked (keep a track by checking the rice)
Strain the excess water and add the half cooked rice into VESSEL 1 !

So VESSEL 1 has the flavored curry in the bottom and rice on the top.
cover the vessel ( seal it with wheat flour - recommended ; Please comment to know how) with its lid
and place anything heavy to seal the steam within the vessel. (could place a big vessel filled with water)

Place the vessel over a flat pan so that the vessel is not in direct contact with fire. If placed on fire the dish would get burnt !

DUM - means cooking with the STEAM . so goes the above technique.

Ahhhhhhhhhhhh this is too much of typing! but hope u guys take time and enjoy this meal !
