Egg Coffee: A Uniquely Vietnamese Treat
Vietnamese egg coffee is a pretty unique phenomenon. It was first created in the 1940s when there was a severe milk shortage in the country. An enterprising barman, Mr. Nguyen, at the Sofitel Legend Metropole hotel, began experimenting. He discovered that you don’t need milk to make a milky coffee. Egg coffee is surprisingly tasty.
The coffee’s exact recipe at the most famous egg coffee shop in Hanoi, Giang at 9 Nguyen Huu Huan, is a closely guarded secret. The coffee shop is owned and managed by Mr. Nguyen’s family. His daughter is the new boss. Using egg whites together with coffee powder, condensed milk, plus a little butter and cheese, they arrive at the flavoursome drink that is so popular today. It is extremely tasty and not at all sickly. It tastes a bit like a very creamy latte, only with much more flavour.
The coffee is often delivered to your table in a small cup sitting in a bowl of hot water. This inures the coffee stays hot and does not congeal. It’s reputation means that the drink has spread throughout the country and a few coffee shops are now selling it in Saigon. I tried it at Heritage and whilst it is not quite as good as the ones I have had in Hanoi, it’s certainly getting there.
I was really sceptical about this, but I genuinely think it is a lovely drink. It screams Vietnam like no other beverage and is representative of the amazing make do and mend attitude of these exceptionally people. If you ever get out to Vietnam in general and hanoi in particular, don’t miss out on this unique culinary experience.
