Carrot Salad
This is a German version of a carrot salad, it contains no raisins and has a nice little kick to it with the addition of horseradish. If you don’t like the taste of horseradish them simply leave it out or add a little more mustard for your liking.
Ingredients
6 large carrots
½ cup sour cream
1 bunch green onions chopped
3 tbsp white vinegar
2 tbsp minced parsley
4 tsp horseradish
2 tsp spicy mustard
½ tsp salt
Pinch of granulated sugar
Directions
- Peel and coarsely grate the carrots, you should end up with about 4 cups of grated carrots.
- Put the carrots on the side.
- Place the remaining ingredients into a bowl and mixture together.
- Stir in the carrots and mix until well blended.
- Season to taste and add more sugar if you would like the salad a little sweeter.
Serves: 8 people
Notes: We usually serve this on Christmas Eve when we have a buffet dinner and a family get together. You could make this at any time of the year, it would be perfect for taking with you to a pot luck barbeque or dinner. Or just any time you want to serve a healthy salad that looks super fancy but is easy to make.
Looks delicious, I will ask my wife to make it for me. (No, I don't just make my wife cook for me...that's our relationship, she cooks and I clean up.)
