Menu Plan Monday

We have had several changes and moves this month. I am not sure why it seems like so many, most likely I am simply noticing because I am documenting it for all of you.

Have you made a weekly menu plan? Monthly? What questions do you have?

Coming up this week we have:

One Pot Pasta with Basil we made this for lunch yesterday since we celebrated my nieces birthday dinner last night

Tacos

Chicken Broccoli Rice Casserole (in refrigerator defrosting)

Carnitas

Shepards Pie

Meatballs & Gravy

Chicken Pot Pie (already in freezer)

   

        

This is a pretty simple week around here. Most of these meals are ready in 30 minutes or less and 4 are made ahead of time and ready to go. I am going out of town Friday and so will have the Shepards Pie ready for the family to eat they just have to pop it in the oven for 45 minutes @ 350°.

My plan is to brown the meat for the Shepards Pie at the same time I make the tacos. I will double the mashed potatoes that go with the meatballs & gravy to use for the Shepards Pie as well. Cook & clean once, eat at least twice is a great simple tip! The carnitas will go in the crock pot on Sunday and there will be enough leftover to make about 2 pans of enchiladas for next month.

This week my shopping trips were light.

Sprouts

Pears, cantaloupe, apples, radishes, cilantro, green peppers, cucumbers, green onions and onions

Sams Club 

milk, eggs, creamer, paper towels, hamburger meat (marked down 50% couldnt pass it up), salami and bananas
