Menu Plan 25.05
Another week has passed, how does that happen?Time flies! Last week went pretty well menu wise we did flip-flop a couple meals I did forget to remind my husband that the chicken enchiladas were in the fridge and just needed to be heated up on Saturday when I was gone all day. I got home at 7pm and they were eating frozen pizza oops! I was upset about my forgetting to tell him, but he reminded me that they did eat and it was fine. Sometimes that is what I need someone to remind me that things going differently than I planned is ok. Part of keeping it simple is to go with the flow and not beat yourself up with the changes. It was pointed out to me that I do keep some easy meals on hand and that is why my family can always make something for dinner if there is a flop in my menu plan. I was reassured that making a plan is the key, even when things go awry.
On this weeks menu we have:
- Meatloaf
- Tacos
- Spaghetti
- Broccoli Beef
- Chicken Pot Pie
- Chicken Tenders chicken enchiladas from last week
- Chicken Quesidilla
- One pot basil pasta
I didnt manage to grocery shop this weekend, I was busy with my Premier Designs Rally on Saturday and on Sunday I didnt get out of my pajamas :) So Monday afternoon I ran by the Sams Club to pick up the things we needed. On this weeks list:
- chicken breasts (they were not available last week)
- bread
- coffee & creamer
- cheddar cheese
- milk
- ham (lunchmeat)
- chips individual bags for lunches
- spinach & salad
- potatoes
- pears
- apples
- bananas
I paid about $4 more for the produce at Sams than if I had made a trip to Sprouts but in this case I felt it was worth it. The pears & apples are both organic and I didnt have to make 2 stops. I was in a car accident a couple of weeks ago (rear ended in parking lot driveway) and I am having neck/back/hip pain. It was quite bad today and so the idea of not having to take another step appealed to me for the small cost difference.
There was very little to prep for this week. The broccoli beef is already put together in a freezer bag, the meatloaf were in the freezer and just had to be pulled out and the shredded chicken for the quesidillas is done. So i moved the frozen items to the refrigerator and prepped for lunches.
While we watched a movie, I popped the chicken I bought at Sams Club on my baking stone and baked it. Once cool, I put it in the fridge and it will go into the pot pies and some into the freezer.
