The EASIEST yummiest cupcake recipe ever! With added EASIEST buttercream recipe ever!

Ok, so today I will show you how to make the easiest cupcakes ever! Forget the packet mixes and pre-made packets. You don't need them, they don't taste great, are full of nasties that don't need to be in there and they cost far too much!

Now, believe it or not, baking is quite an art/ science and weights need to be followed, otherwise you can get all sorts of results! I guess this is why the rise of the boxed cupcakes is growing - no pun intended! However, just follow this recipe and make sure your weights are correct and they will turn out perfect every time.

Amounts will depend on how many cupcakes you want to make. NOTE: In this recipe, I used 3 eggs, which converted to 196g. This made 10 cupcakes.

CUPCAKE RECIPE
Free Range Eggs
Unsalted Butter (make sure it isn't just out from the fridge as it will be too firm)
Caster sugar (I personally use golden caster sugar but the white version is fine)
Self-raising flour
Flavouring to taste e.g. vanilla

Just 5 ingredients!

First, get yourself some scales and some eggs. Weigh the eggs IN THEIR SHELL and make a note of it. In this case, 3 eggs weighed 196 grams.

Next, weigh out the amount you had for the eggs in unsalted butter and caster sugar. Mix them together until light and fluffy.

Weigh out the amount you had in eggs in self-raising flour. Add a spoonful of self-raising flour and 1 egg and mix - this will stop the mixture from curdling. Add the remaining eggs 1 at a time with a bit of flour until all ingredients are mixed together - not forgetting to add your flavouring to taste.

Place in cupcake cases.
TOP TIP: Use an ice cream scoop to put the mixture into the cases - perfectly evenly filled amounts!

Cook for 10-15mins at 150°C (which I believe is about 300 Fahrenheit) Take out of the oven and leave to cool (or steal one to eat just to check they are ok!).

At this point, you can enjoy as they are (how I like them) or add buttercream to the top (how most other people like them!)

BUTTERCREAM RECIPE
If you want to top your cupcakes with buttercream, then this super easy buttercream recipe will finish them off perfectly. Again amount you want to make depends on how many cupcakes you have made. There is a general rule to follow - weigh your butter then add double that weight in icing sugar, for example for this I did...

200g Salted butter (make sure it isn't just out from the fridge as it will be too firm)
400g icing sugar
Flavouring to taste e.g. vanilla etc

Put them all in the bowl and mix them all together until light and fluffy.
