Sweet and Sour Spare Ribs 糖醋排骨

hello everyone ! today I bring the dish ----- the sweet and sour ribs to you .

This is a famous dish in China. It lies in the Four Cusine (ShangHai,ZheJiang,SiChuang,HuaiYang).
It has a littel sweet and a little sour ,oil but not greasy, taste rich .the colour is golden ,half clear and half thick.Old people and children are all like it .

Ingredients includes the following:
ribs ,garlic ,ginger ,green onion , soy souce ,vinegar , sugar,peanut oil ,cooking wine , seasame seeds .

1、chop the ribs and make it into small pieces. I add the small pieces to the boiled water .After a minute ,I put it on a dish.
2、chop the garlic,ginger,green onion
3、Add a little of peanut oil to the heated pot ,fry the ribs ,when it became golden colour,then take it out .
4、add the sugar to the pot ,fry the sugar for a minute .put the ribs into the pot and fry the ribs .
5、add the choped green onion ,ginger,garlic ,a tablespoon of soy sauce ,a tablespoon of vinegar and cooking wine to the ribs .
(according to your favorite flavour,you can change the seasoning.)
6、stew the ribs for 5-10 minutes until the soup dry out .take it out . put it into a dish and sprinkle with seasame seeds .

糖醋小排
这是一道中华名菜。沪,浙,川,淮扬四个菜系中都有这个菜。
这道菜 “酸甜适中,不油不腻,口感丰富细腻,不会觉得任何一种调料的突兀。 颜色呈糖稀色,不浓不淡,男女老少皆宜。因为口味比较平和,孩子们很喜欢吃。自己在家中烹饪,其实没有餐馆里那么讲究,只求快捷、好吃即可。”

原料:
排骨,葱,姜,大蒜,生抽,糖,陈醋,料酒,花生油少许,熟芝麻

做法:
1、排骨斩小段洗净 、飞水 ,沥干水分装盘。
2、蒜、姜,葱 切碎粒。
3、热锅内少许油,先煎一下排骨,待两面金黄捞出。锅内放入少许糖,炒糖色,然后再倒入小排骨,均匀翻炒,使之上糖色。
4、葱姜蒜沫加生抽一大勺,陈醋小勺 调成汁 直接浇在排骨上,(根据个人口味,我没有再放盐,味道正好)大火烧开后,小火炖5-10分,最后大火收汤汁,撒点白芝麻装盘即可。

嗯,每个人口味不同,用量可以酌情增减。糖在这里只是调色的作用。并不是很甜那种。我也不喜欢吃太甜的。非常感谢你的关注!
