Fried rice with mixed vegetables and egg originated in Yangchow fried rice.
Yangchow fried rice is a famous dish in China, it is a classical snacks in YangZhou which ia a city in south of China. YangZhou is close to the ShangHai, So Yangchow fried rice belongs to the Huaiyang Cuisine Style.

With the time-honored past, Huaiyang cuisine, as one of the four Chinese cuisine families, is noted for its flavor style and unique cultural deposit. Jiangsu cuisine is one of the traditional biggest cuisine in China. When cooking the fried rice with mixed vegetables and egg, first fry eggs, and fry other vegetables, last add in rice and mix well . Standard YangChow fried rice contains chicken, shrimp, pork and etc..

Today the dish I cooked didn't contain meat, was fried rice with vegetables. It belongs to the common dish in north of China.
you can put any kind of vegetables as long as you like, I think it is as delicious as you taste.

Ingredients:

  • cooked rice
  • yellow sweet pepper
  • red sweet pepper
  • egg two
  • salt 2g (add in eggs)
  • salt 4g (add in rice)
  • peanut oil 10g
  • pepper
  • sesame oil
  • green onion
  • peas
  • cucumber

Instructions:

wash the vegetables, dice the sweet pepper and onion.

chop the green onion, add in eggs, stir and mix well, add in salt.

heat a pot, put oil in it, add in eggs, fry it quickly and chop it with a shovel. place it in a plate. Don't fry it over much, or it taste dry and tough.

put a little peanut oil in a pot, add in peas and fry it for two minutes until it cooked. add in green onion,

fry it for a while and add in sweet pepper, fry it for a minutes, add in pepper and rice. fry it evenly, make the rice coated with vegetable oil.

fry it for two minutes, add in cooked eggs, mix well and add in salt and sesame oil, dish up .

什锦蛋炒饭,源自扬州炒饭。扬州炒饭是中华的一道名菜,它是江苏扬州的经典小吃。扬州在中国南方,离上海很近,属于淮扬菜系。淮扬菜系历史悠久,它是我国传统四大菜系之一。制作什锦蛋炒饭时,先将鸡蛋炒好,再把其他青菜炒好并调味,加入熟的米饭一起翻炒均匀装在盘中。
标准的扬州炒饭有鸡腿肉,虾仁,廋肉丁等。我今天做的是什锦蔬菜炒饭,没有放肉类。属于北方普通的青菜蛋炒饭。其实只要家里有什么蔬菜就放什么,炒饭只要适合自己的口味,做出来都是一样美味。

原料(三人份):
米饭 2小碗
黄甜椒半个
红甜椒半个
鸡蛋2个


白胡椒
香油
大葱末 放鸡蛋里
洋葱
豌豆
黄瓜 (装饰)

做法:
先把各种蔬菜清洗干净,甜椒和洋葱切丁。
大葱切末,加入打散的蛋液中,搅拌均匀,加一点盐调味。
热锅下油,放入蛋液,快速翻炒片刻,用铲子用碎,装盘备用。鸡蛋不要炒老了,否则就不好吃了。
再放入少许油到锅里,放入豌豆,翻炒熟了,加入洋葱丁翻炒,加入甜椒丁继续翻炒,加入胡椒调味,加入米饭,把米饭用铲子打散,炒均匀,使每一粒米饭都渗透着熟菜油的清香,
炒均匀后,加入鸡蛋碎,搅拌均匀,加盐,香油即可出锅装盘。
搭配喜欢的汤和泡菜, 趁热享用。
