A Famous Local Snacks In JianShui ---Roast Tofu . 建水美食 烤豆腐

Two days ago ,I introduced a ancient city ---JianShui city to you .Do you remember it ? Today I would like to introduce the local snacks to you ,a very delicious roast tofu. the only reason I write it specially because It has a great reputation .
It appeared on A Bite of China---a Chinese documentary television series on the history of food, eating and cooking .
So it attracts thousands of tourists include me. Now let's look at it .

Compared with the Ling'an West Road, delicious food are more along the east side, especially the imperial Street area,

Probably because there are more tourists in here, here is one of the most famous delicacy together, it is the "JianShui No.1 - XiangMan Building".
This is an antique two storey courtyard, At peak production, even in the yard will be put on the table .

The most characteristic of local food in JianShui is mostly natural ,pollution-free green food, where there are all kinds of vegetables, and even many medicinal value of wild vegetables.
Specialty is linan roasting tofu, lion cake, etc. Now I'd like to share with you the riasting tofu .

All tourists travel to jianshui, always taste the special roast tofu.
The unique flavor, the rest fragrance around of your face ,often lead you an endless aftertastes.

Linan city tofu has a very long history .as early as in the qing dynasty.
It is said that Zhou's tofu began to make in 1883 .selecting the ingredients seriously, proceeding fine and using the big and round yellow bean ,so this kind of tofu is white and tender,dosen't become black after roasting .

after the tofu is done , wrapped it with gauze,pressed by the special board,when the water of tofu flow out ,remove the gauze and put the tofu in a dustpan.
sprinkle a little salt on each of them and then cover the tofu with a dustpan.

turning it over every other day untill ashen white, you can roast it .
when roasting it ,put the lighted charcoal in a brazier, the rack with metal welding, put tofu on the iron bar coated with sesame oil at the same time turning it untill tofu inflated, can dip the season, such as sweet salty soy sauce and mashed garlic, monosodium glutamate, and so on.

The roasting tofu around the vegetable market,night market,street,is like a beautiful scenery line in ancient city.

大家好:

还记得两天前我介绍了建水古城,今天介绍以下当地的小吃。烤豆腐。之所以单独写它,是因为在当地,只要去建水旅游的乘客,一般都会买烤豆腐吃。它有着超高的人气,《舌尖上的中国》曾经就在此录制了建水小吃--烤豆腐。。
这足以说明它有多美味了。。我们来看一下。。

相较临安西路,东路这边美食更多,特别是翰林街一带,大概因为游客多些,这里是美食扎堆,其中最出名的就要算“建水第一楼——香满楼”了。

这是一座古色古香的二层楼四合院,最火爆的时候连院子里都会摆上几桌散座。

建水当地饮食最大特点是大多都是天然、无污染的绿色食品,那里的蔬菜种类齐全,甚至还有许多具有药用价值的野生蔬菜。特色食品有临安烧豆腐、狮子糕、泡糕等。

凡到建水旅游的外地游客,总免不了要品尝建水特有的临安烧豆腐。那别具一格的味道,绕颊的余香,常常令人回味无穷。

临安城豆腐的历史极其悠久,早在清代中后期就享有盛名。其中以城西周氏烧豆腐味道最佳,相传周氏豆腐从清光绪九年(公元1883年)开始制作,其选料认真,加工精细,专用大而圆的白皮黄豆,做出的豆腐洁白细嫩、火烘不变黑;做好后用小块纱布包好,压上特别的木板,待水流尽后,去掉纱布装入簸箕内,每块豆腐放上一点盐,再盖上一张簸箕,隔日翻动一次,待呈灰白色,即可烧食。

烧时用火盆装上点燃的木炭,架上用铁条焊接成的炕,铁条上涂以香油,放上豆腐烘烧,边烤边翻动,待豆腐充气膨胀,即可蘸以配好的甜咸酱油、辣椒面、蒜泥、味精等佐料食用。

建水城街巷、菜市、夜市、风景旅游景点的烧豆腐摊,人来熙住,成为古城中的一道亮丽风景线。
