MY HOMEMADE BEEF BARLEY SOUP ( 13 ORIGINAL PHOTOS)

Hi Steemit! Today I made a delicious hearty homemade beef barley soup. I used my own creative version. It pack full of fresh vegetables and wonderful fresh spinach. Yes I said spinach. As in Popeye!!!!!! I hope you enjoy.

INGREDIENTS NEEDED:
2 1/2 pounds of beef, cubed into bite size pieces
1 pound of mushrooms, quartered
1 large carrot, sliced
1 medium onion, chopped
2 cups of fresh spinach
1/2 cup pot barley
4 1/2 cup low sodium beef stock
3 cloves of garlic, chopped
1 tablespoon tomato paste
1 teaspoon of dried thyme
1 teaspoon of dried oregano
2 teaspoons of salt
2 teaspoons of pepper
1/2 cup flat leaf parsley
2 whole bay leaves

Start off with 3 tablespoons of oil in your soup pot. Heat, then start browning your beef.

When your beef is browned, put in your chopped onions and cook until tender.

Next pour in your 4 1/2 cups of beef stock and bring to a boil.

Next step, put in your chopped mushrooms, 1/2 cup flat leaf parsley, and your carrots. And also put in your 1 tablespoon of tomato paste. Stir well and let soup come to a boil for about 10 minutes.

Then pour in your 1/2 cup of pot barley, stir well.


Next add your bay leaves into your soup. Let soup cook for about 1 hour. Until everything is cooked and well combined. The longer you cook your soup the more tender your beef will be.

Let cook for about 1 hour. Till all ingredients are cooked and are tender.

Add in all of spices. Thyme, oregano, salt and pepper.

Last but not least add your 2 cups of fresh spinach and let cook until all combined in your pot.

And here we are. My delicious beef barley soup is ready to serve.
