Have you heard or had the opportunity to taste "Cassava". There are 2 types "sweet" and "bitter" It is a perennial grown in tropical climates. Originated in Southern American forest regions, but it is also grown in parts of Asia, Africa and Southern United States. The cassava root is very similar to "yams". The shelf life for this vegetable is only 1 day and must be cooked the same day as harvesting. The leaves are also ediable by boiling them and discarding the water.

Cassava is very similar to White potatoes. It's very high is calories. Just one cup of boiled cassava contains 330 calories. It is naturally gluten free. So it's very popular with people suffering from celiac disease and is good for diabetes. It's low in glucose, decreases appetite and can relief inflammation as it contains "saponins", also breaks down uric acid.


If cassava is cooked improperly it can be poisonist or deadly, as it contains toxic compound linamarin, which really translates to hydrogen cyanide. If you become sick you should watch for these symptoms are vomiting, nausea, dizziness, stomach pain, headache, irreversible paralysis or even death. It should never been eaten raw. Once peeled and cooked the toxic substances are removed.
