Apple charlotte with thyme custard

Ingredients:

6 braeburn apples, peeled, cored and more or less chopped
2 entire braeburns cored
60 gm (2½ oz) caster sugar
Juice of half of a lemon
three tbsp water
150 gm (5 ounces) butter
10 slices bread, crusts eliminated
Custard

200 ml (6 fl. oz. / ¼ pint) double cream
2 hundred ml (6 fl. ounces / ¼ pint) complete (full cream) milk
2 sprigs of thyme
6 loose variety egg yolks
75 gm (3 oz) caster sugar

Instructions:
